While I haven't played it too much the Anomaly mod is very good after you've had a little experience with the games though. There's a lot of good posts about modding on the /r/stalker subreddit though.
There's a few mods around claiming to be enhancements or remasters that in practice change a lot of very fundamental mechanics and deviate really strongly away from the base experience. One thing I would suggest though is that you don't mod the games, or at least don't mod them too heavily, for your first run. Call of Pripyat is generally recommended as the best one, as it was the last one to be released, and really you can play the games in any order so it doesn't matter too much. They are basically the premier games of that description, and despite their age still hold up incredibly well.
